"Cat in the Hat" Cake
We asked our followers (on IG and FB) to help us name this cake. My husband said it reminded him of a Dr. Seuss illustration; the icing appeared to swoop and flow, like Seuss’s well-known images. The winning name: Cat in the Hat Cake! (Thanks Patti!)
This cake has quickly become our favorite - to bake, decorate and eat! The cake is 6”, perfect for your dinner party (or - who are we kidding - ideal for a personal binge, but you’ll feel better sharing!). And it’s vegan! If you’re not a vegan person, and to be honest, I’m not, you won’t taste the difference. So go ahead, eat the cake.
Unsweetened cocoa, GF flour, coconut oil, vinegar, unbleached sugar, baking soda, salt, vanilla.
The icing is made with coconut oil, 10x sugar and vanilla. We top the cake with fresh raspberries.
One cake serves 8; these are generous slices, as the layers are quite fat.
